It's been a crazy, fun weekend at the Hopp house! Friday morning was the big day for Mr Liam, we went out and got him his very first bike, a Skuut. Anyone with little kiddos, I'd recommend starting them out with one. The bike helps them to learn balance before they moved up to a big-kid bike. Skuut shopping also provided mom and dad with an excellent learning opportunity. Unfortunately, I realized the import of the lesson after the fact. Here goes, if you are buying an outside toy for your child which requires you to assemble it and the weather is craptastic then don't take them with you to pick it out! Very important. Once we had picked out the bike and were on our way to buy Liam a helmet, all we heard was "bike, bike, bike" nonstop for about 45 minutes. Then I had a 2 year old helper while I was trying to get the thing put together, luckily it's a pretty simple design. Lastly, we had to ride the Skuut inside because it was raining.
On Saturday, we had a very nice day hanging out in Middleton. We had originally planned on heading down to Lake Kegonsa for the day to play at the beach, but the weather didn't look like it wanted to cooperate. Instead we visited with Nana, went to the lake, played around at the park, had nice naps, and daddy even managed to go out a geocache a little bit before our dinner party. For dinner we made vegetarian sushi with a teriyaki dipping sauce and miso soup.
Raw Nori Rolls
4 sheets nori seaweed
1 cucumber, julienned
1 carrot, julienned
1 ripe avocado, sliced
1 tbsp black sesame seeds
1 cup sushi rice
2 tbsp rice wine vinegar
pich of dill for seasoning
Teriyaki Sauce
1 cup shoyu soy sauce
1 cup pure maple syrup
1 tsp ginger, whole or chopped
1 clove garlic
drizzle of toasted sesame oil
Sunday, funday consisted mostly of dodging rainstorms and doing some stuff around the house. All in all a pretty good weekend if I do say so. Now it's back to the grind and ready for another week of running around trying to stay sane. We'll see you all on the flipside!
